Mouchao Ponte Tinto
A fantastic combination of fresh red berries and ripe dark fruit with dark chocolate richness. Soft and generously texture, with a great level of complexity and concentration.
At Mouchão, all the red wines are vinified in open stone troughs, known as lagares. Whole bunches, including stems, are included in the maceration process making harvest timing especially critical to find the delicate balance between sugars, acids and overall phenological maturity, as well as stalk lignification. The handpicked bunches are foot-trodden twice daily and allowed to ferment for 4-7 days. The wine then undergoes malolactic fermentation in large 5000L wooden tonéis. It is racked in mid-winter and then remains undisturbed for a further 18 months. Once bottled, the wine was matured in our cellars for a further 18 months before being released.
